Bean The name for a cacao seed once it has been dried.
Cacao The tree, and the seeds, that every bar starts from.
Criollo The cacao variety that has traditionally been the most prized.
Crop What a farm grows to sell.
Dry To spread the beans out so the water leaves them.
Equator The trees grow naturally within 20 degrees of this line around the Earth.
Evergreen A tree that keeps its leaves all year. Cacao is one.
Farmer A person who grows a crop.
Ferment To leave the seeds in piles or bins so their flavor develops.
Ghana A West African country, one of the two biggest growers of cacao.
Harvest To cut the ripe fruit from the trees.
Ivory Coast A West African country. With Ghana it grows about 60 percent of the world's cocoa.
Pod The fruit of the tree. Each one holds 30 to 50 seeds.
Pulp The sweet, sticky flesh around the seeds, said to taste like lemonade.
Rainforest A warm, wet woodland where showers fall most days.
Ripe Ready to pick.
Sack A large rough bag for shipping beans.
Seed What sits inside the pod, wrapped in sweet white pulp.
Tree A tall plant with a woody trunk.

From Bean to Bar 25

Blend To mix beans from different places.
Chill To cool the filled trays until the bars set.
Cocoa butter The pale fat pressed out of the bean. White chocolate is made with it.
Conche To stir and knead warm chocolate until it turns smooth.
Factory The building where beans become bars.
Foil Thin shiny metal sheet for covering a bar.
Grind To crush the nibs until they turn into a thick, dark paste.
Husk The papery skin of a roasted bean, removed by winnowing.
Label The printed paper that names the bar and gives its percentage.
Melt To turn from solid to liquid. Chocolate does it in your hand.
Mold A tray of shaped hollows that liquid chocolate is poured into.
Nibs The broken inside pieces of a roasted bean.
Paste The thick, dark mass made by grinding the nibs.
Percent The number on a label that tells how much of the bar came from the bean.
Pour To tip liquid chocolate into the trays.
Powder The dry brown dust left after the fat has been pressed out.
Press The machine that squeezes the fat out. One was patented in 1828.
Refine To pass the mix between rollers until no grit can be felt on the tongue.
Roast To heat the dried beans so they turn dark and smell like chocolate.
Roller A heavy steel cylinder that crushes the grains finer.
Sift To shake powder through a fine mesh.
Stir To keep the liquid moving with a paddle.
Temper To heat and cool chocolate carefully so it sets with a shine and a snap.
Winnow To blow the loose skins away from the broken beans.
Wrap To cover a finished bar.

Kinds of Chocolate 16

Baking The kind sold in blocks for recipes, often with no sugar.
Bittersweet A kind of dark chocolate with less sugar than semisweet.
Compound A lower-cost alternative to real chocolate, used in baking and candy making.
Couverture A kind with extra cocoa butter, used for dipping and coating. The name is French for covering.
Dark The kind made without milk. It holds a higher share of cocoa than the other two main kinds.
Filled A kind with a soft center, such as cream or nut paste, inside a shell.
Flavored A kind with mint, orange or another taste added.
Gianduja Chocolate with nut paste, most often from hazelnuts, mixed in.
Milk The pale brown kind, made with dairy.
Modeling A chocolate paste soft enough to shape like clay.
Plain Another name for dark chocolate.
Raw The kind made with beans that were not roasted.
Ruby A pink kind, released to the public in 2017.
Semisweet A kind of dark chocolate with more sugar than bittersweet.
Unsweetened Baking chocolate with no sugar added at all.
White The ivory kind, made with cocoa butter and milk but none of the brown part of the bean.
